The harvest of our organic olives mobilizes the entire village of Sismano<\/strong> to select the fruits of a whole year of work, between October <\/strong>and November<\/strong>. Our team supervises this magical moment to shorten the times and obtain the highest quality<\/strong>.<\/p>\n<\/div><\/div>\n\n\n\n

A modern oil mill <\/strong>and high quality control <\/strong>guarantee the quality for each stage of processing<\/strong> of the precious organic olives: from washing<\/strong>, to the grinding<\/strong> of the dough, its mixing<\/strong> at a controlled temperature<\/strong> up to the extraction of its nectar <\/strong>which ends up in the package<\/strong>.<\/p>\n<\/div><\/div>\n\n\n\n

The Art of Blending <\/strong>requires the Selection<\/strong> and Sensory Harmonization<\/strong> of Extra Virgin Olive Oils<\/strong> just extracted from different areas and sectors of our olive grove<\/strong>. Each sector is characterized by different varieties of Organic Olives <\/strong>and it starts right from the row where the olives grow our process of selection for the right blend.
